William Cole (we call him Señor Bill) first noticed the xxxxx birds when he first planted vineyards in Casablanca in 1992.
Bill was aiming high as he was one of the very first to recognize the Casablanca had the potential to make incredible wines.
The birds were an inspiration to Bill when making his first wines and still remind us today that we should aspire to the natural perfection these birds have and effortless beauty they display when ascending on the warm air currents rising through the day.
The birds are aldo a constant reminder that what we do in the vineyards is constantly being observed from up high and that quality is something that we all strive for either consciously or like our feathered fiends flying high, hence..
We make our single varietal wines with a sense of freedom like the xxxx (bird) and allow our wines to express the land in Casablanca with influences from the Pacific ocean providing a cool breeze and valley retaining heat in the soil overnight to ensure our wines ripen at just the right time to ensure our signature freshness of fruit and lovely balance.
